The other day at the office we were talking about what to have for someone’s birthday instead of cake. We’ve done breakfast tacos to death, donuts til we are all round and brownies and cookies in abundance. So when the new boss mentioned breakfast pizza my ears perked up. I’ve heard of pizza dessert but I have never had breakfast pizza. But I’ve made a crescent casserole which is similar so I gave it a whirl.
Anything with crescent rolls is definitely a win in my book so I give it a thumbs up. If it hadn’t been a Friday during Lent, I would have added bacon or sausage. Also, I didn’t use enough eggs for the amount of dough I had so I put my potatoes around them and they worked out fabulously.
Plus I used a couple of the crescents for my Chocolate Raspberry Crescents which always make me happy.
Crescent Breakfast Pizza
Ingredients:
1 tube Reduced fat crescent rolls (I only used six triangles)
2 eggs and 1 egg white
1/4 green pepper, diced
1/4 c 4-cheese Italian blend
Olive oil
Salt and pepper, to taste
Fried Potatoes (recipe)
Instructions:
Unroll dough and spread on a cookie sheet. Roll up sides to make a crust around the entire dough. Brush olive oil on dough. Bake at 350 for 12 mins.
Bake potatoes according to recipe. Add 1 tsp olive oil to skillet at medium-heat. Add green peppers and cook for 5 mins. Whisk eggs together and season with salt and pepper. Add to green peppers. Cook until almost done.
After taking dough out of the oven, spread eggs on dough. Sprinkle cheese on top of the eggs. Add cooked potatoes around eggs on dough. Bake for 10 mins. or until dough is cooked through.
And go ahead and have you some dessert for breakfast too.
