One of my nephew Caleb’s favorite places to eat breakfast is Denny’s. I’m not a fan of breakfast chains but the last couple of times we’ve gone I’ve gotten this egg scramble that they have and I have to admit that I enjoyed it. It’s hearty and filling. I was looking for something new to eat for breakfast and decided to try my hand at putting one together. It was super simple and I especially love that you can easily adapt this to whatever you have on hand.
Egg and Potato Scramble
Ingredients:
1/4 lb pork sausage
1 red potato, diced
1/2 tsp olive oil
2 eggs
2 egg whites
1/4 tsp parsley
1/4 tsp chives
Salt and pepper, to taste
2 Tbsp cheddar cheese, shredded
2 Tbsp Parmesan cheese, shredded
Instructions:
Brown pork sausage in a skillet over medium heat. Drain and set aside. Add olive oil to skillet and add potatoes. Bake covered, stirring occasionally, for 20 minutes. (You can do this simultaneously in two separate pans.). Beat eggs together seasoning with salt, pepper, parsley and chives. Once potatoes are cooked, add pork sausage into the pan. Add egg mixture and scramble everything together. Cook until eggs are almost cooked. add cheese and let melt.
