I love banana pudding. Well pretty much anything banana related I enjoy. And banana cream pie is one of my favorite desserts. When I was young I used to get a thrill out of licking the spoon after my mom finished making the filling for her pies. Ok so that was last Thanksgiving but I digress.
Other than having banana pudding in pies, I never make it just to have it. When I saw this recipe (ok the photo) on Bakerella’s website I knew I wanted to try it. I’ve never seen it made with sweetened condensed milk before so I was curious how it would taste. It was so sweet but delicious. Serving it in individual cups makes it even better.
Cold & Creamy Banana Pudding (Recipe slightly adapted from Bakerella)
1 (14-ounce) can Eagle Brand Sweetened Condensed Milk, Fat Free
1 1/2 cups cold water
1 (3.5 ounce) package instant pudding and pie filling
2 cups Lite Cool Whip
Vanilla wafers
2 medium bananas, sliced and dipped in lemon juice
In a large mixing bowl, combine sweetened condensed milk and water. Add pudding mix and beat until well blended. Chill 5 minutes in refrigerator. Carefully and slowly fold in Cool Whip. Spoon pudding mixture into bottom of individual serving bowls. Top with wafers, bananas and pudding. Garnish as desired. Chill thoroughly. Refrigerate any leftovers.
