I love making mini food for breakfast. Who wouldn’t want to start their day eating cute little food. Now I will admit that I usually have waffles or oatmeal for breakfast. Sometimes if I have a couple of extra minutes or I’m feeling particularly good I’ll add syrup to my waffles or slices of banana to my oatmeal. I’m crazy like that! But if I wake up an hour or so early I’ll usually root around in my recipes for something new to try for breakfast. Thus Giada’s Mini Frittatas. They were delicioso.
Mini Frittatas (Recipe adapted from Giada de Laurentis)
Ingredients:
Nonstick vegetable oil cooking spray
2 large eggs
2 Tbsp 2% milk
Salt and black pepper, to taste
2 ounces thinly sliced deli ham, chopped
1/4 cup freshly grated Parmesan
1 tsp chopped fresh Italian parsley leaves
Instructions:
Preheat the oven to 375 degrees F.
Spray mini muffin tins with nonstick spray. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes.
