As most Americans, I keep to tradition and eat Black Eyed Peas on New Year’s Day. Usually they are made out of the can but this past year I made my own black eyed peas in the crock pot and loved them. So to begin 2011, I asked my friend Shaun for her Black Eyed Pea recipe as I knew she would have something I would love because she is a great cook like that. So this is basically her recipe adapted a bit with a couple of my own touches. And let me tell you, these were good!
Black Eyed Peas
Ingredients:
1 bag Black Eyed Peas
Chicken Stock, enough to fill pot 2/3 full
1 pkg Salt pork
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic, chopped
1 Bay Leaf
1/2 onion, chopped
Instructions:
Soak the beans in a pot full of water overnight. In the morning, drain, rinse and clean the beans free of any dirty/broken beans. Fill a pot 2/3 full of chicken stock and bring to a boil. Add the salt pork, salt, pepper, garlic and bay leaf to boiling chicken stock and boil for about 30 minutes. Add the black eyed peas to the pot. Reduce heat to a slight boil. Cover with a lid and let cook for approximately 1 1/2 hour or until tender. About 30 minutes prior to being done add diced onions.
