I never thought I would enjoy meatloaf but last year I saw Jamie Deen making his wife’s meatloaf http://addictedtorecipes.blogspot.com/2010/01/brooke-meatloaf-and-garlic-mashed.html and knew I needed to try it. It was good but I’m always looking for new recipes to try so I came up with this one after making a beef hobo packet http://addictedtorecipes.blogspot.com/2010/10/beef-patty-in-mushroom-sauce-foil.html and loving the meatloaf like flavor that was the final product. Instead of using cream of mushroom soup, I used some onion soup packet seasonings. The end result was delicious. I love making things in packets or muffin tins for portion control.
Italian Meatloaf Muffins
1 lb Hamburger meat
1/2 c Italian bread crumbs
1/2 package Onion soup mix
1 Egg
2 Tbsp Ketchup
Salt and pepper to taste
Glaze:
2 1/2 Tbsp ketchup
1 tsp Dijon mustard
1 tsp molasses
Instructions:
Preheat oven to 350 degrees F.
Combine all ingredients, except for ingredients needed for the glaze. Combine hamburger meat with remaining ingredients until all of the ingredients are mixed well. Spray a regular muffin pan with Pam spray. Split the meat mixture evenly to make nine muffins. Combine glaze ingredients and drizzle evenly among the nine muffins. Bake for 35-45 minutes.
