This spice cake mix and pumpkin muffin recipe has been all over the Weight Watchers message boards for a while now. I added the egg and water per some of the suggestions and also added more spices to spruce it up even more. And then I split the recipe in half and added mini semisweet chocolate chips to half of the batter. For a low point dessert these are not bad. Of course, if you are like me you will eat too many which negates the low point aspect. And we ate these too fast to even bother topping with a maple or cream cheese frosting.
Pumpkin Spice Muffins aka Cupcakes
Ingredients:
1 box spice cake mix
I 15oz can pumpkin
1/2 c water
1 egg
1 tsp ground Cinnamon
1/2 tsp ground Ginger
1/2 tsp ground Nutmeg
1 Tbsp Brown Sugar
Instructions:
Preheat oven to 350 degrees. Mix all ingredients together. Fill muffin tins with liners and add mix 3/4 of the way full. Bake 25 mins. or until done.
Don’t forget you can add mini semisweet chocolates or even walnuts/pecans to the mix.
