I found a couple of new food blogs this weekend and this wrap comes from one — Lick the Bowl Good blog.
I’m a fan of the Chicken Caesar Salad and I love me some tortillas so when I saw this put together — and so simply — I knew I had to have it. It was good and healthy too. But I do prefer a homemade tortilla or barring that, warming up my tortillas directly on a gas stove but since I couldn’t do either at work I made do with the microwave.
Chicken Caesar Wraps

2 Tortilla wraps (I used Mission 96% Fat Free)
Romaine lettuce, chopped
1 Chicken breast, sliced (they sell individual grilled chicken at my local Randall’s)
Caesar dressing (Kraft Fat Free Classic Caesar)
Parmesan Cheese, grated
Fresh ground pepper
Instructions:
If you prefer to heat the wrap, place wet paper towels between two and microwave for 25 seconds. This will keep them from sticking and also will steam them.
Place the wraps on a plate. In the center of the wrap, pile the romaine lettuce in the center. Top with sliced chicken breast. Spoon the desired amount of dressing over chicken and sprinkle with freshly grated Parmesan cheese and fresh ground pepper. Wrap and eat.
And since I’m trying to bring in healthy food to work, I made my own version of the ready snak packs that I would normally get at the grocery store.
This was my breakfast/mid-morning snack. It consisted of butter snap pretzels, baby carrots, small banana, and cheddar cheese bites. They now have 100 calorie cheese bite packets and I’m so excited. I’m a sucker for 100 calorie anything. I substituted a banana for the red grapes that are normally in the pack.
