Catfish Sandwiches with Tartar Sauce and Southern Style Green Beans with Potatoes

I recently got the Weight Watchers Ultimate Classics magazine and have many recipes from there I want to try. One recipe I made this weekend was the Catfish Sandwich with Tartar Sauce. It was easy and very good. We paired this with a potatoes and green bean dish from the Deep South Dish website. The potatoes and beans were so good – probably the best I’ve had. The catfish was good too and we had it with the 80 calorie hamburger buns which made helped make it healthy.

The catfish recipe calls for Cajun seasoning — well I didn’t want to spend $3 on something I would only use a couple of times so I googled it and came up with a homemade seasoning.

Catfish Sandwiches with Tartar Sauce

Ingredients:

1/2 c fat-free mayonnaise
1 Tbsp sweet pickle relish
1/2 tsp garlic powder
1 1/2 tsp fresh lemon juice
1 tsp Worcestershire sauce
1/2 c yellow cornmeal
2 tsp salt-free Cajun seasoning (see recipe at bottom for homemade seasoning)
1/4 tsp salt
4 (6 oz) catfish fillets, cut in half
2 tsp canola oil
Cooking spray
4 light wheat hamburger buns, toasted
Condiments of your choosing

Instructions:

Combine first five ingredients in a small dish, set aside. (This is your tartar sauce for the sandwich.)

Combine cornmeal, Cajun seasoning and salt in a shallow dish. Dredge fillet halves in cornmeal mixture, shaking off excess.

Heat a large nonstick skillet over medium-high heat. Add oil, swirling to coat pan. Add fish. Cook 5 mins. Coat fish with cooking spray, turn and cook 5 mins or until fish flakes easily when tested with a fork.

Spread 1 Tbsp mayonnaise mixture on each bun half. Top with fillet and any condiments of your choosing.

Homemade Cajun Seasoning

Ingredients:

3 Tbsp granulated garlic or garlic powder
3 Tbsp ground black pepper, freshly ground if possible
1/8 tsp ground cayenne pepper, or to taste
1 Tbsp paprika

Preparation:

Combine all seasonings and mix to blend thoroughly. Pour into a small jar with cover; seal tightly.
