I love chicken baseballs. I modified the recipe I found a bit and made them again tonight. My mother even loves these and she is not a fan of most of my food.
Chicken Baseballs
Ingredients:
3 wedges Laughing Cow Garlic and Herb flavored cheese, softened (or 3 oz cream cheese)
2 tsp light margarine, melted
1 1/4 tbs milk
salt and pepper to taste
2 cups cooked chicken, shredded and cubed (I like to use a rotisserie chicken that I get from the grocery store)
1 8oz can reduced fat crescent rolls
1 egg
Breadcrumbs
Instructions:
Preheat oven to 350 degrees.
Combine cheese, melted butter, salt, pepper and milk until it is creamed together. Season chicken with salt and pepper. Pour mixture over chicken and stir.
Unroll crescent roll dough into four rectangles and seal perforations. Spoon 1/4 mixture into center of each. Pull opposite corners of dough to center and seal. Place on sprayed cookie sheet.
Crack egg and add a couple of drops of water to create egg wash. Brush egg wash over baseballs and sprinkle with breadcrumbs. I prefer the italian seasoned crumbs. Bake at 350 degrees for 20 minutes.
