I’m a fan of Oprah’s OWN channel. One of my favorite shows to watch on that channel is Welcome to Sweetie Pie’s. Their food looks absolutely scrumptious so when Oprah offered up several of Miss Robbie’s recipes on her website I was quick to make them.
These candied yams are perfect for a Sunday dinner with your family or for Thanksgiving dinner. They were absolutely heavenly with a sweet syrup taste to them. Each member of my family had seconds of our meal of candied yams and fried chicken.
Miss Robbies Candied Yams (recipe slightly adapted from Miss Robbie via Oprah.com)
4 large sweet potatoes
10 tablespoons margarine
1 c sugar
1/3 c dark brown sugar
1 1/2 tsp vanilla extract
1 tsp ground nutmeg
1 tsp ground cinnamon
2 1/2 c water
Peel sweet potatoes and cut them in half lengthwise. Cut in half then lengthwise into 3/4 inch slices.
In a medium pot, melt butter. Add sugar, nutmeg, cinnamon, vanilla, and water and bring to a boil. Toss in sweet potatoes to pot and stir. Reduce heat to low and cover.
Cook for 45 minutes to an hour or until potatoes are “candied.”
